    Porsi: 6 porsi

    Bahan-bahan

    1. 1 Kg (6 pieces) Lilydale Free Range Chicken Drumsticks
    2. 4 cm piece ginger, finely grated
    3. 1/2 cup (150 g) mayonnaise
    4. 1 L (4 cups) sunflower oil
    5. 1 tbs each black and white sesame seeds, toasted
    6. 1 spring onion, sliced
    7. Lemon wedges, to serve
    8. sriracha glaze
    9. 1 tbs sunflower oil
    10. 1 garlic clove, finely grated
    11. 2 tbs light soy sauce
    12. 1/4 cups (60 ml) Sriracha
    13. 1 tbs rice vinegar
    14. 1 tsp brown sugar

    Langkah

    1. Combine chicken and ginger in a bowl. Season, then chill for 1 hour.

    2. For the glaze, heat oil in a large fry pan over medium heat. Cook garlic, stirring for 30 seconds or until fragrant. Add soy, Sriracha, vinegar and sugar, and cook for further 3 minutes or until reduced slightly. Remove from heat. Cool slightly.

    3. Place mayonnaise in a bowl. Add 2 tsp Sriracha glaze and stir to combine.

    4. Heat the oil in a large saucepan over medium heat until it reaches 180°C (a cube of bread will turn golden in 30 seconds when oil is hot enough). Place four in a bowl. Add chicken and toss to coat. In batches, deep-fry chicken for 6 minutes or until golden. Drain on paper towel. Repeat with remaining chicken. Rest chicken for 5 minutes. Return oil to 180°C and add all the chicken pieces. Cook for a further 8 minutes or until cooked through.

    5. Dip chicken in glaze and sprinkle with sesame seeds and spring onion. Serve with mayonnaise and lemon wedges.
